Bayley Hazen Blue
Bayley Hazen Blue is one of two cheeses in this selection that comes from one of our favorite American cheesemakers, Jasper Hill Farm. This raw cow’s milk cheese has a beautiful fudge-like texture with a mellow, nutty flavor that doesn’t clobber you over the head with peppery funk, like some other blue cheeses.
Harbison
We went back and forth over whether to include two cheeses from the same producer, but we love Jasper Hill’s creamy Harbison so much that we couldn’t bring ourselves to leave it out. Harbison is a soft-ripened cow’s milk cheese with a bloomy rind that comes wrapped in strips of spruce cambium, which is harvested from the woodlands around Jasper Hill in Vermont.
Petit Billy
For tangy chèvre lovers, we've got you covered with the Petit Billy. This is a light and bright fresh goat’s milk cheese that comes wrapped in chestnut leaves. Petit Billy is a crowd-pleaser that fits in perfectly at any dinner party's hors d’oeuvre spread.
Alp Blossom
Think of Alp Blossom as the cool, free-spirited artsy cousin to the more reserved Gruyères and buttoned-up Emmentalers of the alpine cheese world. We guarantee that people will hesitate to cut into Alp Blossom once you set it out at the table, because it’s almost too pretty to eat. The wheel is coated in a mix of dried herbs and flower petals, including marigold, rose petals, lavender, and chervil. Its sweet, floral exterior gives way to a nutty, umami-rich interior that will keep you coming back for more.
Délice de Bourgogne
Délice de Bourgogne is a no-holds-barred triple crème cheese (think: brie) with a whopping 75% butterfat content. This may not be your everyday cheese, but it’s certainly one that’s worthy of a special occasion, or just a cozy night in. There’s nothing like curling up on a cold night with a rich, creamy cheese like this, a good bottle of wine, some homemade bread, and a backlog of television episodes to stream.
